Ingredients: 1.5 kg of boneless veal, 3 tablespoons of butter, 1 tablespoon of rosemary, 1 tablespoon of tarragon, salt and pepper. You also need to prepare a marinade: ¾ cup of dry white wine, 2 tablespoons of oil, 1 onion (10 dag), 2 cloves of garlic, 1 bay leaf, 4 cloves, 10 peppercorns, and 1 tablespoon of thyme.

Wash veal, clean it of membranes, tie with a white cotton thread, and arrange it tightly on the barbeque. The meat should be grilled for about 20 minutes. Later, the meat should be soaked in the marinade. To prepare the marinade: peel an onion and cut it into slices. Peel garlic and cut each clove into four pieces. Pour oil into wine, add onion, garlic and spices. Mix everything thoroughly. Meat should be poured with the marinade, covered, and left in a cool place for 12 hours. From time to time turn the meat over. Then drain it, rub it with pepper and salt, and sprinkle with herbs.

Next, meat can be roasted in a casserole. Melt 2 tablespoons of butter in the dish, put meat in it, then pour the rest of melted butter and roast meat for about 90 minutes in the oven in 190 °C. After 15 minutes of roasting meat should be poured with the marinade. Then, cool the meat down, remove the thread, cut the veal into thin slices, arrange it on large plate and add the jelly of the skim solidified sauce.
