Grilled zander with horseradish

Required ingredients: 1 kg of zander, 250 g of pork fat, 2 raw eggs, 2 tablespoons of grated horseradish, 2 large tablespoons of chopped parsley, 1 tablespoon of lemon juice, salt, pepper, a teaspoon of sugar, sprigs of parsley, small tomatoes, a few quarters of lemon.

Scale and fillet zander, sprinkle it with lemon juice, salt and pepper, and leave for 30 minutes. Mix all ingredients together with sugar, chopped parsley, lemon juice and raw egg yolks. Smear zander halves with the prepared stuffing and put them together. Then wrap fish into slices of pork fat and tie with a thread. Grill zander, then remove the slices of pork fat and decorate it with tomato and lemon slices. Grilled zander tastes good with baked potatoes and vegetable salads.

The best for grilling are lightly cooled fish rather than frozen ones. Another good idea is grilling smoked fish or mixing grilled meat of fish with smoked or raw fish. If the temperature is very high, fish should be kept in the fridge or the icebox, because it goes off quickly.
