Grilled eggplant

To prepare grilled eggplants you need the following ingredients: eggplants, garlic, parsley, balsamic vinegar, and olive oil.

Eggplants should be cut into thin slices, salted and left for half an hour to drain water off them. Then grill both sides of eggplants on the barbeque or a special grill pan. Dip each slice of eggplant in balsamic vinegar. All ingredients should be placed on a platter, then sprinkled with garlic and parsley, and poured with olive oil. Eggplants can be also left in the fridge for half an hour. Eggplant is also known as aubergine, melongene, guinea squash or brinjall.

Young, small eggplants are the tastiest, because not a single of bitterness is felt in their taste. Before eggplant is cooked, you need to wash it and remove the leaves with its cap. You do not need to peel eggplants, because then they lose a lot of nutrients. You should also remember that eggplants are not aromatic vegetables; therefore we mix them with other vegetables.

Eggplants can be very tasty, if they are breaded, fried, or stewed with garlic and onion. Currently, it is very fashionable to prepare eggplants on the barbeque as an appetizer, side, or main course. You can also bake or stuff eggplants. The cooked eggplants are perfect for pastes.
